Get your hand on their early cookbook – CrustacĂ©s, Poissons et Coquillages by Paul et Jean (RIP) Minchelli. 1977 edition, and you’ll understand what serious fish cuisine is. Unmatched until Japanese chefs are doing the same to all French cooking quite recently.
