Mr. Lobrano - I have your book and it's wonderful. I often read it before going to bed even if no trip to Paris is planned! We are going to Paris this December and I'm curious to try the special Lyonnais menu being offered at Aux Lyonnais. Do you know whether the special menu will be offered during lunch Merci - Kim

Coincidence(s)…! This week I also dined at The Oyster Bar, at the counter, and had 36 delicious oysters, with a decent glass of wine. Service was efficient, which was OK. Then, tonight, at Danny Meyer's Union Square Cefe, also at the counter, an indifferent heirloom tomato salad which disappointing (although the goat cheese was very good), ditto a glass of insipid French wine; however the Sea Bass was nicely done, and a glass of unfamiliar Italian wine—IGA, not DOC— went down nicely with it. The barman was distant at best….So go figure.!
Another night at Daniel Boulud's Bistro Moderne was everything it should be…attentive, etc.

It always amazes me when those in a service industry like the restaurant business don't get the service part.Danny Meyer gets it. His book should be required reading for everyone in the restaurant business. Given the my way or the highway attitude in a restaurant I choose the highway. I look forward to your writings every week.

Whenever I get some version of "You can always go elsewhere." to what I consider a valid, reasonably expressed complaint, my response is always "Take a good look at my face cuz you'll never see it again."
