Just back in rainy Paris from a trip to New York City, and I have to say that Celsius stands up admirably to any of the best new restaurants in America's most gastronomic city.

Thanks for your interesting comment, and I agree with you that no one should take inspiration from Asia's kitchens without a really bone-deep understanding of these cuisines.

And insofar as Australian cooking is concerned, I think the thing I found most interesting about my most recent trip is that it is actually in the process of being born. Just mucking it up with Mediterranean and Asian references doesn't work for me, but the food at Celsius is really good, if not always perfect, and I also really admire Marque in Sydney.

Many occasions,it is a cheap copy of another Cuisine that slaps together.

Asian Cuisine has a lot of techniques and certain combination of spices that is balanced to a dish.For example, aniseed goes with pork only, bean sprouts has to be blanched before serving as a salad etc.
It is vital to research or again we become the joke of the century.
